Oh Canada! Pumpkin Pie

An old-fashioned recipe, but one that conjures up warm memories of crisp fall leaves, walks down the dead-end road and the wonderful chaos of Thanksgiving weekend. Travis makes this one every year which gives an idea of how quick and easy it is…just combine all ingredients in blender and press the PUREE button. Voila, that’s it! I don’t think he’d last much longer than 20 minutes in the kitchen before undoing my apron from around his neck and sneaking out. This year George joined him in the kitchen and the end result was delicious!

1 can (14oz) pumpkin puree

1 cup brown sugar

1 pkg (4oz) cream cheese, softened

1/2 cup whipping cream

2 eggs

1 tbsp flour (we used gluten-free)

1 tsp cinnamon and vanilla

1/2 tsp each ground ginger, nutmeg and salt

CRUST: we used store bought or g-free one

TO MAKE: Puree all ingredients in food processor. Pour into pie shell; bake in bottom third of 350 degrees oven for 1 hour or until set around edge and slightly jiggly in centre. Let cool on rack.

Make ahead- cover and refrigerate for up to 8 hours

Top with fresh whipping cream with a drop of pure vanilla extract and enjoy eh?
