the everyday lovely.

29 Mar

This is one of my favorite places to sit in the house.

Is it to bask in the warmth of the sun streaming through the window?

Is it the comfort of sitting in one of the worn, wooden chairs with my feet up?

It’s where I sit when I want to ignore the pile of dirty dishes waiting for me in the kitchen sink.

I turn my back on that scene, turn on this computer and enter the land of the internet. And type away on this here little bloggy-blog.

Blogs are a funny thing as they certainly do not capture all aspects of life.

Because do I really want to post a picture of that sink full of dishes, or the tower of laundry needing to be folded?  Do those things really bring pleasure to my eye?

So that’s why I don’t display ALL areas of my life on here.

Just the things that make me happy.

Looking through my camera lens, and posting pictures on here is a way to focus on the positive.  To appreciate the beauty in all that I’m blessed with.

I love to post pictures of everyday things that are lovely in their simplicity.

Often it’s the moments spent with G.

As I started taking pictures and posting on this blog I realized that I don’t want to just have an album full of posed ‘events’. Instead I love the thought of just capturing everyday moments.

…and typing away on here is just a really great alternative to doing the dishes!

a sweet date.

22 Mar

Other then snacking on alot of sweet dates, I needed to do something with the 3 pound bag of fresh, lovely Mejool Dates from when Travis’ parents visited a date farm a few weeks back….thanks Olive!

Thought I better make something with those sweet dates, so I made a simple, yet SCRUMPTIOUS cheesecake and used the dates for the crust.

And of course it’s gluten free!

For this crust, only 2 ingredients needed:

  1. 2 cups Almonds.
  2. 2 cups pitted Dates.

Lots of possibilities for this crust for different pies and cakes.

One can use 1 cup Walnuts and 1 cup Almonds…i just didn’t have walnuts on hand. Also, I halved the recipe as I only wanted to make a little cheesecake. Okay, back to the recipe.

  1. Process nuts until fine in food processor. Add dates and process until forms ball.

2.  Grease springform pan with butter and press into pan.

Voila! Crust is done. No need to bake.

Now for the cheesecake:

  • 2 pkg. cream cheese
  • 3/4 cup. granulated sugar
  • 3 eggs
  • 1 tbsp. lemon juice
  • 2 tsp vanilla
  • pinch salt
  • 3 cups sour cream
  1. In large bowl, beat cream cheese until soft. Gradually beat in sugar; beat until smooth and light (about 3 minutes).
  2. Using low speed, beat in eggs, 1 at a time. Blend in lemon juice, vanilla and salt, then sour cream.
  3. Pour over crust.
  4. Set springform pan in larger pan; pour enough hot water into larger pan to com 1 inch up side of springform pan.  Bake in center of 325 degree oven for 1 1/4 hour or until edge is set yet center is jiggly. Turn off oven and run knife around edge of cake. Let cool in oven for 1 hour.  Remove from water and transfer to rack; let cool completely.

* this can be refrigerated for up to 2 days or wrapped with foil and frozen for up to 2 weeks.

Fortunately everyone thought that this was SCRUMPTIOUS! Unfortunately that meant no next-day-leftovers for me!

gluten-free goodness

21 Mar

There is a fellow celiac now in the family.

Hannah, welcome to the world of gluten-free!

So my sweet niece, although it can be a little tedious at times, thankfully the world is becoming a little more gluten friendly each day….

And you have your Tante Suzy to share some tried, tested, and yummy recipes with you…

Sad you have been diagnosed with Celiac, but at the same time happy that I can share some g-free goodness with you. So tell your Mama to turn on the oven and put on those oven mittens on. I’m going to try and make a point of posting some gluten-free recipes on here for YOU! The great thing is that many recipes I’ve found are good to share with EVERYONE and not noticeably g-free. So share away! Unless of course it’s just so delicious you want to keep the treat all to YOURSELF, then you can use the excuse that it’s gluten free and just for YOU!

So stay tuned for lots of g-free goodness…

miss you cousins!

joshua david.

9 Mar

happy birthday to you bro!

i wish we could be home to CELEBRATE YOU today.

you are certainly an AMAZING PERSON to celebrate!

joshua david, i hope you realize what an amazing guy you are, not just on your birthday but EVERYDAY!

i hope you know that you have taught me so very much about many important things in life.

how to be happy, excited and appreciative of the little things in life…even if it over a little thing like your favorite can of orange crush!

how great it is to turn on the radio FULL BLAST and sing out loud FULL BLAST while rocking out in the car. i only get to do this with you bro and it feels so great!

how important it is to be kind to others and actually say kind words to others…although not many people can pull off some of the stuff you say with the charm and coolness that you do josh. for example, “hey ladies, lookin’ good!”

how much fun it is to let loose and dance, NOT WORRYING about what anyone around you thinks. whether it’s in the middle of the sidewalk listening to some street performers, at a party, or in the middle of a movie theater.

you have taught me how to have a sense of humor about things that i may not at first think are funny.

you have shown me how great it is to LOVE openly and express ALL of your emotions openly.  emotions of saddness, admiration, joyfulness, humor, excitement, happiness.

so today josh, although i am miles away, i will crank up the country tunes, pour myself an orange crush, and dance and sing at the top of my lungs…HAPPY BIRTHDAY TO THE COOLEST GUY AROUND! happy birthday to you!

i love you brown cat!

rock on!

josh i just had to put in this picture of you and travis. it just makes me laugh out loud!
